In April 1998 Ben and Pam McKellar opened the Gingerman restaurant in Norfolk Square, Brighton. The focus is on quality ingredients, British wherever possible, underpinned with classic French style. The décor is smart and simple and the service friendly. The focus on excellent food at reasonable prices has made the Gingerman a very successful neighbourhood restaurant with an enviable reputation.

In September 2004 Pam & Ben opened a second Gingerman outlet at the Drakes; a stylish new hotel on Brighton Seafront. Ben was able to raise the bar in the kitchen as well as with the décor by creating a truly fine dining experience. Ben explains that the Drakes has more special occasion diners which compliments the neighbourhood feel of the Gingerman in Norfolk Square.

Alliance has worked closely with the Gingerman for the last 3 years to craft the perfect wine list. At around 70 bins the list is comprehensive without becoming a tome. The classics are all covered but the real focus is on high quality small producers who offer value for money. Recent additions include the Tinto from Quinta de Ventozelo (Douro, Portugal) and Giné Giné (Priorat, Spain).
