Food & Wine : The Kilberry Inn

I imagine the last thing people expect to find on the B8024 is a red tin roofed, roses round the door, Michelin Bib Gourmand restaurant. But here it is, The Kilberry Inn. Everyone (including their accountant) thought they were mad to take it on but in the 2-½ years since they bought it Clare and David have entertained world famous opera singers and flamenco guitarists and had cosmopolitan journalists hopping with excitement.
The Dish
Kilberry Potted Crab
One of the simplest dishes served at The Kilberry Inn is also one of the most popular. People call in advance to make sure it will be on the menu and one guest even requests it for his breakfast.
Ingredients
- 1lb freshly picked brown and white crabmeat
- 2 egg yolks
- A tablespoon of soft butter
- (Anchovies optional – a couple pounded into the butter)
- Clarified butter for the top
- A small carton of double cream
- Salt, pepper and cayenne
Oven 170C
Makes 4 ramekins

In a bowl mix the crab, (checking for any bits of shell you may have missed) with the cream, butter and egg yolks, season to taste and add as much or as little cayenne as you like. Into ramekins and onto a tray in the oven for 15 –20 minutes or until golden. Allow to cool and then top with a thin layer of clarified butter.
Serve with hot toast and lemon wedges in the sunshine with a glass of Bodegas Laus Do Somontano Flor de Chardonnay. The rich creamy palate of the chardonnay works really well with this dish and the clean citrus finish leaves the mouth refreshed and craving for more. A marriage made in heaven. Bodegas Laus is a very modern state of the art winery producing many well known single varietal wines, it is typical of the new wave of wines coming from Spain these days. The Chardonnay is fresh and clean with only a very small proportion (less than 10%) seeing any oak, the result a rich citrus and tropical fruit nose with a creamy palate and a hint of vanilla.
